Violations include: Person-in-charge had expired food manager certificate; employee's bottled drink was stored in clean plastic bin with single-service items; buckets were stored on clean side of sink with food residue; mozzarella cheese in prep top unit for 30 minutes wasn't cold enough; and timer on pizza racks was not set.
