For the second year, Charlotte Weekly served as a media sponsor for Taste of Charlotte, the annual event held uptown that serves up the best of Queen City restaurants. In addition to the food and beverages, patrons peruse vendors and exhibits.
Heidi Billotto, CW food editor and restaurant critic, was on hand at the WBT Radio outdoor kitchen, set up in the city’s heart at Trade and Tryon streets. There, Billotto filmed a live cooking demo for the WBTV News at Noon on Friday, June 1. Samples of her blueberry cobbler went quickly to the teeming Taste of Charlotte crowd. Enjoy the recipe below and mark your calendar for next year’s event!
CLASSIC BLUEBERRY COBBLER
1 stick butter or margarine
1 cup sugar
1 cup self-rising flour
1 cup milk or half-and-half
2-3 cups fresh blueberries
Melt butter and pour into a 9-inch square or round deep-sided baking dish. In a mixing bowl, combine the flour and sugar, stirring with a small whisk to remove lumps. Add milk, and stir until smooth. Pour batter over the butter in the baking dish. Do not stir. Pour berries over the batter, but again do not stir. Bake in a preheated, 375-degree oven for 40-45 minutes. Serve hot, warm or cool, with ice cream or whipped cream. The recipe also works well with peaches or raspberries substituted for blueberries. In months when fresh fruit is not available, try the recipe with bananas and chocolate chips for a delicious variation.
